→ Topping

17 - 1/2 cup shredded mozzarella cheese
18 - 1/4 cup grated Parmesan cheese

# How to Make It:

01 - Preheat oven to 375°F. Lightly grease a 9x13-inch baking dish with butter or cooking spray.
02 - Fill a large pot with salted water and bring to a boil. Add lasagna noodles and cook according to package instructions until al dente. Drain thoroughly and lay noodles flat on a parchment-lined surface to prevent sticking.
03 - In a mixing bowl, combine ricotta cheese, mozzarella, Parmesan, chopped spinach, basil, eggs, minced garlic, salt, black pepper, and red pepper flakes. Mix until all ingredients are evenly distributed and well combined.
04 - In a small saucepan, melt butter over medium heat. Add minced garlic and cook for 1 to 2 minutes until fragrant but not browned. Remove from heat and stir in parsley, salt, and pepper. Set aside.
05 - Spread approximately 2 tablespoons of filling evenly along the length of each cooked noodle. Roll up tightly starting from one end and place seam-side down in the prepared baking dish. Repeat with remaining noodles.
06 - Drizzle half of the garlic butter sauce evenly over the roll-ups in the baking dish.
07 - Sprinkle the remaining mozzarella and Parmesan cheeses uniformly over the roll-ups.
08 - Cover the baking dish with aluminum foil and bake in the preheated 375°F oven for 25 minutes.
09 - Remove foil and continue baking for 10 additional minutes until the cheese is golden and bubbly.
10 - Remove from oven and drizzle the remaining garlic butter sauce over the roll-ups. Allow to rest for 5 minutes before serving.

# Expert Tips:

01 -
  • They look fancy enough to impress guests but honestly come together faster than you'd think.
  • That garlic butter sauce is where the magic happens, turning simple cheese and noodles into pure comfort.
  • You can make them ahead and bake whenever you want, which is my favorite kind of dinner.
02 -
  • Squeezing the moisture out of frozen spinach is non-negotiable, or the whole dish turns watery and the filling won't hold together when you cut into it.
  • Don't brown the garlic in the butter sauce, that makes it bitter and harsh, just get it fragrant and warm.
03 -
  • Room temperature ricotta mixes more smoothly than cold, so pull it from the fridge a few minutes before you start.
  • Taste the filling as you go because everyone's preference for salt and garlic is different, and it's easier to adjust before you roll.
